This delicious Christmas recipe is a variation of traditional Lebkuche (honey cake), and traces to the Pennsylvania Dutch settlement in Stark County, Ohio. It was evidently taken there from Pennsylvania and serves as an important reminder that the Pennsylvania culinary diaspora spreads far beyond the borders of our state. If a little more flour is kneaded into the dough to make it slightly stiffer, it can be rolled out to form pretzels for hanging on the Christmas tree – an old Pennsylvania custom still practiced in many households. Otherwise, mold the dough into traditional jumbles (doughnut shapes) and bake as directed. Jumbles were traditionally dipped in hot coffee or sweet wine. Children dipped them in milk.
